Cathay Pacific Refines Premium Cabin Caterings with Michelin Star Duddell Partnership


I previously wrote about Cathay Pacific having a stellar first quarter of 2024, and it seems like they aren't slowing down anytime soon.


Cathay Pacific's partnership with Duddell, now in its second year, brings a gastronomic upgrade to the airline’s premium cabin menus under the banner of ‘Chapter 2’, serving passengers on select long-haul flights from Hong Kong.



Passengers at the forefront of the plane are treated to exquisite Cantonese dishes that start with a crystal pork terrine appetizer, dipped in black vinegar, followed by a main course of sautéed abalone and chicken with Sichuan pepper, accompanied by crispy greens. The culinary journey concludes with a dessert of nutty black sesame tart paired with tofu ice cream.



In Cathay Pacific's first class, these gourmet meals are complemented by an exceptional selection of wines, including Krug 2004 Champagne, served in a specially designed flute to enhance the vintage's finest qualities.




Business class menus are equally enticing, featuring innovative dishes such as Sichuan-style poached chicken with sesame and chilli sauce and braised pork ribs with hawthorn sauce and green apples, demonstrating Cathay Pacific’s dedication to offering authentic local flavors and culinary innovation.

Vivian Lo, Cathay Pacific's General Manager Customer Experience and Design, emphasizes that the ‘Hong Kong Flavours’ menus reflect the airline's deep-rooted ambition to connect Hong Kong with the world through culinary excellence. This initiative is a departure from traditional inflight dining options, showcasing a broader spectrum of Hong Kong’s iconic dishes and its culinary diversity.


This collaboration with Duddell’s is part of Cathay Pacific’s broader effort to enhance its inflight and on-ground experiences. The initiative also includes contributions from Rosewood Hong Kong to the first-class lounge menu at The Pier and the opening of a new sea port lounge in Shekou, underscoring the airline’s commitment to delivering unparalleled luxury and comfort to its passengers.
